ABSTRACT This specification covers the material, design, and performance requirements pertinent to the construction of water-driven rotary spray type, stationary rack commercial pot, pan, and utensil washing machines that are manually fed yet automatically controlled to uniformly wash, rinse, and heat-sanitize food preparation utensils. Representative production models of the washers shall pass performance, operation, leakage, and energy and productivity tests, and should function satisfactorily as specified. Certification, product marking, and packaging are also considered. SCOPE 1.1 This specification covers manually fed, spray-type stationary rack, automatically controlled, water-driven rotary spray commercial pot, pan, and utensil washing machines, herein referred to as “the washer.” 1.2 The values stated in inch-pound units are to be regarded as standard. The values given in parentheses are mathematical conversions to SI units that are provided for information only and are not considered standard. 1.3 The following safety hazards caveat pertains only to the test methods portion, Section 9, of this specification. This standard does not purport to address all of the safety concerns, if any, associated with its use. It is the responsibility of the user of this standard to establish appropriate safety, health, and environmental practices and determine the applicability of regulatory limitations prior to use. 1.4 This international standard was developed in accordance with internationally recognized principles on standardization established in the Decision on Principles for the Development of International Standards, Guides and Recommendations issued by the World Trade Organization Technical Barriers to Trade (TBT) Committee.
Abstract
Overview
ASTM F1114-22 is the internationally recognized standard specification for heat sanitizing commercial pot, pan, and utensil washing machines, specifically focusing on stationary rack, water-driven rotary spray types. These machines are designed for the effective cleaning and heat sanitization of food preparation utensils in commercial and institutional settings. The specification establishes stringent requirements for materials, design, construction, performance, safety, and sanitation, ensuring that washers reliably remove soil and sanitize equipment through uniform washing, rinsing, and heat sanitizing cycles.
ASTM F1114-22 applies to manually fed, spray-type stationary rack machines that are automatically controlled. The standard also includes criteria for certification, product marking, packaging, and references several key regulatory and testing standards to support compliance and product safety. This specification is crucial for manufacturers, purchasers, facilities managers, and operators in the foodservice industry.
Key Topics
- Material Requirements: Washers must utilize corrosion-resistant materials, such as stainless steel complying with ASTM specifications, to ensure durability and hygiene.
- Design & Construction: Machines are required to be robust, easy to service and clean, and protect against leaks and energy wastage. Features include removable spray assemblies, accessible piping, and adjustable legs.
- Performance & Testing: Rigorous operational and performance testing is mandated, covering aspects like leakage prevention, energy efficiency, productivity, and operational noise limits (not to exceed 80 dBA at operator stations).
- Safety & Hygiene: Must comply with NSF/ANSI 3 for sanitation, UL 921 for electrical safety, and relevant OSHA regulations. Door interlock systems and anti-backflow protections are required to safeguard operators and product integrity.
- Classification: Machines are categorized by rack capacity, style (door configuration), and heating method (steam, electric, or gas), allowing users to specify systems tailored to their needs.
- Certification & Marking: Products must be clearly marked with manufacturer details and compliant certification marks, including NSF and UL listings where applicable.
- Manuals & Packaging: Equipment manuals must conform to ASTM F760, and methods of commercial packaging follow ASTM D3951.
Applications
ASTM F1114-22 is relevant for:
- Commercial Kitchens & Foodservice: Ensuring compliance with health department regulations and delivering dependable cleaning performance for pots, pans, and utensils.
- Hospital & Institutional Food Facilities: Supporting infection control protocols through effective heat sanitization of cookware and preparation tools.
- Industrial Catering & Hospitality: Providing reliable, high-throughput cleaning solutions in hotels, cafeterias, and catering operations.
- Naval & Shipboard Use: The standard includes supplementary requirements for shipboard installations, such as enhanced stability and water conservation features.
- Procurement & Specification: Facility managers and procurement specialists rely on ASTM F1114-22 to select compliant machines, ensuring both operational efficiency and regulatory alignment.
