ISO 14673-1|IDF 189-1:2004 specifies a method for the determination of the nitrate and nitrite contents of milk and milk products by cadmium reduction and spectrometry. The method is applicable to: whole and partly skimmed and skimmed dried milk; hard, semi-hard and soft cheeses; processed cheese; whey cheese, caseins and caseinates and dried whey. The method may be performed using automatic equipment, in particular by segmented flow analysis (SFA) or flow injection analysis (FIA), thus reducing cadmium contamination in laboratory work places and waste water.
Abstract
Overview
ISO 14673-1:2004, titled Milk and milk products - Determination of nitrate and nitrite contents - Part 1: Method using cadmium reduction and spectrometry, establishes a standardized laboratory method for accurately measuring nitrate and nitrite concentrations in a variety of milk and dairy products. Developed jointly by ISO and the International Dairy Federation (IDF), this standard ensures comparability and reliability of results across different laboratories and countries.
The method utilizes cadmium reduction followed by spectrometry to detect and quantify nitrate and nitrite ions. It is suitable for numerous dairy matrices, including dried milks, cheeses, whey proteins, and caseinates. The method can be executed manually or enhanced with automated systems like segmented flow analysis (SFA) and flow injection analysis (FIA), which both improve laboratory efficiency and help reduce cadmium waste.
Key Topics
- Analytical scope: The method is applicable to whole, partly skimmed, and skimmed dried milk; all forms of cheese (hard, semi-hard, soft, processed, and whey cheeses); caseins and caseinates; and dried whey.
- Principle of the method: Nitrate ions are reduced to nitrite using a copperized cadmium column. The resulting nitrite, along with original nitrite in the sample, is then determined via a colorimetric reaction and spectrometric measurement at 538 nm.
- Sample preparation: Specific guidance is provided for preparing different product types (milk powders, cheeses, whey, caseinates) to ensure representative and reliable testing samples.
- Safety and waste management: Due to the use of toxic cadmium, the standard emphasizes the importance of laboratory safety and proper chemical waste disposal.
- Automation: The method is adaptable to automation (via SFA or FIA), promoting efficiency, consistency, and environmental protection in analytical laboratories.
- Quality assurance: Guidelines are included for calibration, column regeneration, repeatability, and reporting to maintain high analytical precision and accuracy.
Applications
The ISO 14673-1:2004 standard is essential for:
- Dairy product quality assurance: Ensures that nitrate and nitrite levels in milk and milk products meet regulatory and safety requirements, reducing health risks for consumers.
- Food safety compliance: Supports compliance with national and international food safety standards concerning nitrate and nitrite content.
- Trade and export: Enables harmonized reporting and verification of nitrate and nitrite levels for international trade and certification of dairy products.
- Process control: Helps dairy manufacturers monitor critical control points during processing and storage that could influence nitrate and nitrite accumulation.
- Regulatory control and surveillance: Supports routine inspection, monitoring, and enforcement activities by food safety authorities.
