ISO 15174:2012 specifies a method for comparison of the total milk-clotting activity of a microbial coagulant sample with the milk-clotting activity of an international microbial coagulant reference standard on a standard milk substrate prepared with a calcium chloride solution of concentration 0,5 g/l (pH ~6,5).

ISO 15174:2012 - Milk and milk products - Microbial coagulants - Determination of total milk‑clotting activity defines an international, comparative method to measure the of microbial coagulants. The method compares a test sample against an (Rhizomucor miehei) using a defined prepared with calcium chloride (0.5 g/l, pH ≈ 6.5). The principle is based on measuring the time to visible flocculation (clotting) under controlled chemical and physical conditions.
