ISO 20483:2013 specifies the Kjeldahl method for the determination of nitrogen content and the calculation of crude protein content in cereals, pulses and derived products. The standard describes sample preparation, digestion, distillation and titration steps, and provides rules for calculating protein from measured nitrogen. It also notes method limitations - notably that it does not distinguish protein nitrogen from non‑protein nitrogen and that nitrates/nitrites may not be fully recovered.
