Is based on Standard No.115 of the International Assotiation for Cereal Science and Technology (ICC). The method consists in measuring and recording of the consitency of a dough as it is formed from flour and water, as it is developed, and as it is broken down. An informative annex A gives a description of the valorigraph.

Overview
ISO 5530-3:1988 specifies a laboratory method for determining water absorption and key rheological properties of doughs made from soft wheat (Triticum aestivum) flour using a valorigraph. Based on ICC Standard No.115, the method records dough consistency during hydration, development and breakdown to produce a valorigram from which water absorption (ml/100 g at 14% moisture), development time and degree of weakening are obtained. The standard applies to flours that give a maximum consistency up to 500 valorigraph units (UV).
