This document specifies two methods: - a reference method for the determination of the moisture content of maize grains and ground whole maize, groats, grits and maize flour, see Clause 4; - a routine method for the evaluation of the moisture content of maize in whole grains, see Clause 5. The latter is not suitable for use for experts' reports, or for calibration or checking of humidity meters, because of its significant bias to the reference method (see Table B.3).

Overview
ISO 6540:2021 - Maize - Determination of moisture content (on milled grains and on whole grains) specifies two laboratory methods to determine moisture in maize and maize products:
- a reference method (for maize grains and ground whole maize, groats, grits and maize flour), and
- a routine method (for whole grains only).

- Ventilation performance is evaluated using durum wheat semolina as a test material (specified limits on moisture result variation).
- Sampling and sample prep
- Sampling itself is outside scope; ISO 24333 is recommended for sampling procedures.
- Particle-size rules: products with particle sizes ≤ 1.7 mm (with ≤10% >1 mm and ≥50% <0.5 mm) do not require grinding.
- Grinding can be performed with or without pre-conditioning; grinding without pre-conditioning is generally used for products with ~9–15% moisture.
- Quality and precision
- The standard includes repeatability, reproducibility and interlaboratory test data, plus guidance on test reporting.
