ISO 6887-4:2017 specifies rules for the preparation of samples and dilutions for the microbiological examination of specific food products not covered in other parts of ISO 6887, which deal with more general categories. This document covers a wide range of miscellaneous products, but does not include new products brought on to the market after publication. ISO 6887‑1 defines the general rules for the preparation of the initial suspension and dilutions for microbiological examination. ISO 6887-4:2017 excludes preparation of samples for both enumeration and detection test methods when preparation details are specified in the relevant International Standards. ISO 6887-4:2017 is applicable to the following products: - acidic (low pH) products; - hard and dry products; - dehydrated, freeze-dried and other low aw products (including those with inhibitory properties); - flours, whole cereal grains, cereal by-products; - animal feed, cattle cake, kibbles and pet chews; - gelatine (powdered and leaf); - margarines, spreads and non-dairy products with added water; - eggs and egg products; - bakery goods, pastries and cakes; - fresh fruit and vegetables; - fermented products and other products containing viable microorganisms; - alcoholic and non-alcoholic beverages; - alternative protein products.
Abstract
Overview
ISO 6887-4:2017 - Part 4 of the ISO 6887 series - is an international standard that specifies specific rules for preparing test samples, initial suspensions and decimal dilutions for the microbiological examination of a wide range of miscellaneous food products. It complements ISO 6887-1 (general rules) by providing targeted guidance where other parts of ISO 6887 do not apply. ISO 6887‑4:2017 clarifies sample handling for product types such as dehydrated and low water activity foods, flours and cereals, eggs and egg products, bakery goods, beverages, fermented foods, margarines and spreads, animal feeds, gelatine, fresh produce and alternative protein products.
Key topics and technical requirements
- Scope and exclusions: Applies to many miscellaneous products but excludes products introduced after publication and any cases where a test method or other International Standard specifies preparation details.
- Diluents and reagents: Describes general and special diluents (e.g., peptone salt solution, buffered peptone water, phosphate-buffered diluents) and enzyme solutions used for sample processing (alpha‑amylase, cellulase, papain).
- Sample types & apparatus: Defines sampling approaches and laboratory equipment considerations for different product forms (hard/dry, high-fat, freeze‑dried).
- Preparation procedures: Product-specific rules for preparing test samples and initial suspensions, including handling of dehydrated/low aw products, flours, gelatine, margarines, eggs, bakery products, fresh fruit/vegetables, fermented products, beverages (including degassing techniques), and alternative proteins (e.g., cooked insects, textured vegetable protein).
- Resuscitation and water activity: Guidance on resuscitation of stressed organisms and measurement/consideration of water activity (aw) for low-moisture products.
- Further dilutions and quality control: Instructions to ensure uniform distribution of microorganisms and to prepare further dilutions for enumeration or detection as required.
Practical applications and who uses it
ISO 6887-4:2017 is used to ensure reliable, reproducible microbiological testing across the food chain. Typical users include:
- Food testing laboratories and microbiologists
- Quality assurance and QC teams in food and beverage manufacturers
- Regulatory agencies and inspection bodies
- R&D teams developing analytical methods for novel food matrices
- Producers of alternative proteins and specialty food products
Applying this standard helps improve comparability of results, supports compliance with food safety programs, and guides lab workflows for challenging or unusual matrices.
