This document specifies an automatic method for the reference method (see ISO 712-1) for the determination of moisture content of cereals and cereal products using an automatic drying oven. This document is applicable to wheat, rice (paddy, husked and milled), barley, millet (Panicum miliaceum), rye, oats, triticale, sorghum in the form of grains, milled grains, semolina and flour. The method does not apply to maize and pulses. NOTE For moisture content determination in maize, see ISO 6540, and for pulses, see ISO 24557.

ISO 712-2:2024 - "Cereals and cereal products - Determination of moisture content - Part 2: Automatic drying oven method" specifies an automatic reference method for measuring moisture content in a range of cereals and cereal products. It defines the principle, apparatus, sample preparation, drying and weighing procedure, calculation and precision criteria for laboratories using an automatic drying oven with integrated balance and software control.

- Typical test portion: 10 g ± 1 g (depending on oven manufacturer).
- Drying time can be reduced to ~60 min ± 5 min depending on oven and material; drying to constant mass.
- Weighing and moisture computation are automated; results averaged from two determinations meeting repeatability criteria.
- Precision:
- Repeatability (r) and reproducibility (R) provided for moisture range 8–14%: r ≈ 0.07%, R ≈ 0.30% (absolute differences as specified).
