This document specifies criteria for the selection of and procedures for the training of trained sensory assessors and expert sensory assessors for food and beverages, as well as home and personal care products. It is applicable to all industries concerned with the evaluation of products by the sense organs. This document supplements the information given in ISO 6658.
Abstract
Overview
ISO 8586:2023 - "Sensory analysis - Selection and training of sensory assessors" provides internationally agreed criteria and procedures for recruiting, screening, training, validating and managing sensory assessors. The standard covers both trained sensory assessors and expert sensory assessors for products evaluated by the human senses, including food and beverages and home and personal care products. ISO 8586:2023 complements general sensory methodology (ISO 6658) and links to vocabulary and test-room guidance (ISO 5492, ISO 8589).
Key topics and technical requirements
ISO 8586:2023 addresses the full lifecycle of a sensory panel with clear, practical requirements and guidance:
- Recruitment and preselection: guidance on internal vs external recruitment, numbers to select, and required background information (health, psychological and other factors).
- Sensory screening tests: validated procedures to screen for colour vision, ageusia/anosmia (taste and smell), texture perception, hearing and descriptive ability.
- Training program structure: principles and stepwise procedures for training assessors, including detection, discrimination, intensity scaling and descriptive ability exercises.
- Assessment methods: instructions for discrimination tests, ranking, rating/scoring, descriptive sensory analysis and use of sensory scales.
- Validation and performance: criteria for validating panel performance and measuring training effectiveness.
- Panel management and follow-up: recommendations for motivation, maintaining skills, renewal, retraining and additional specialist training for expert assessors.
- Informative annexes: practical examples and exercises (colour screening, texture differences, palate cleansers, common scales, sample scaling/ranking exercises).
Practical applications and who uses it
ISO 8586:2023 is intended for organizations that rely on human sensory evaluation, including:
- Food and beverage manufacturers and R&D teams
- Home and personal care product developers
- Sensory laboratories and contract testing services
- Quality assurance and regulatory teams using sensory endpoints
- Academic researchers and educators in sensory science
Benefits include improved repeatability and validity of sensory data, standardized assessor qualification, and better comparability between tests and laboratories.
