La présente partie de l'ISO 11212 prescrit une méthode pour la détermination de la teneur en mercure dans les amidons, fécules, produits dérivés et sous-produits d'amidonnerie par spectrométrie d'absorption atomique avec génération de vapeur froide. Les appareils générateurs de vapeur froide actuellement commercialisés utilisant des techniques très différentes, il est donc impossible de proposer une méthode détaillée susceptible de garantir l'obtention de résultats satisfaisants sur tous les types d'appareils.
