ISO 13720:2010 specifies a method for the enumeration of presumptive Pseudomonas spp. present in meat and meat products, including poultry.
Abstract
Overview - EN ISO 13720:2010 (Meat and meat products, Pseudomonas spp.)
EN ISO 13720:2010 specifies a validated microbiological method for the enumeration of presumptive Pseudomonas spp. in meat and meat products (including poultry). The standard defines the sampling preparation references, the selective culture medium (CFC agar), incubation conditions and a simple biochemical confirmation (oxidase test) to report presumptive Pseudomonas counts per gram or millilitre.
Key topics and technical requirements
- Scope: Enumeration of presumptive Pseudomonas spp. in raw and processed meat products and poultry.
- Sample preparation: Prepare initial suspensions and decimal dilutions in accordance with ISO 6887‑1 and ISO 6887‑2.
- Selective medium: Use Cephalothin‑Fusidate‑Cetrimide (CFC) agar - basic medium supplemented with cephalothin, sodium fusidate and cetrimide as inhibitors. Media preparation and quality checks follow ISO/TS 11133 guidelines.
- Inoculation & incubation: Spread 0.1 ml of appropriate dilutions onto CFC plates. Incubate at 25 °C ± 1 °C for 44 h ± 4 h. Retain plates with
