Overview
EN ISO 3493:2014 - Vanilla: Vocabulary is the international vocabulary standard published by ISO and endorsed by CEN. It defines the most commonly used terms relating to vanilla and is applicable principally to Vanilla fragrans (syn. Vanilla planifolia) and Vanilla tahitensis, and certain seed‑derived forms of Vanilla fragrans. The standard is not applicable to Vanilla pompona (Antilles vanilla).
This vocabulary standard provides a common language for producers, processors, traders, laboratories and regulatory bodies engaged with vanilla beans, extracts and prepared vanilla products.
Key Topics
The standard organizes terms into clear categories and provides concise definitions. Main topic areas include:
-
Terms relating to production
- Example entries: green vanilla (fruit at the correct stage of ripeness) and cured vanilla (green vanilla that has undergone suitable treatment to develop flavour).
-
Presentation and commercial forms
- Defined commercial forms include pod (whole fruit, botanically a capsule), vanilla pod (commercial name for whole pods), split vanilla, cut vanilla, bulk vanilla and powdered vanilla.
-
Morphological characteristics
- Pod anatomy terms such as hook (peduncular end) and stud (end opposite the hook) are standardized.
-
Qualitative classification and defects
- Descriptive quality terms include supple vanilla, dry vanilla, frosted vanilla (crystals of naturally exuded vanillin), woody vanilla, mouldy vanilla, oxidized vanilla, and other commercial defect descriptors (wart, stain, red filaments, infested, etc.).
The standard also provides equivalent French terms in an informative annex to aid multilingual use across CEN member countries.
Applications
EN ISO 3493:2014 is practical for stakeholders who need consistent terminology and improved clarity in documentation, including:
- Product specification and labeling for vanilla beans and prepared forms
- Quality assessment and classification in procurement and inspection
- Commercial contracts and trade communications to reduce ambiguity
- Technical documentation and training materials for cultivation, curing and handling
Using the defined vocabulary reduces misunderstandings between producers, traders and testing laboratories and supports harmonized trade practices.
