EN ISO 8968-3:2007 (identical to ISO 8968-3:2004) specifies a semi-micro block-digestion method for the determination of nitrogen content in liquid whole or skimmed milk. This rapid routine method converts organic nitrogen to ammonium sulfate using concentrated sulfuric acid, hydrogen peroxide and a catalyst in a block-digestion apparatus. Ammonia is liberated by addition of excess sodium hydroxide, distilled and quantified by titration or photometric endpoint detection. The measured ammonia is used to calculate the nitrogen content (expressed as mass %), a primary indicator for estimating milk protein.
