ISO 12082:2006 (IDF 52:2006) defines a calculation method to estimate the content of added citrate emulsifying agents and acidifiers/pH‑controlling agents, expressed as citric acid, in processed cheese and processed cheese products. The method applies when products do not contain major ingredients with appreciable citric acid content other than milk powder and/or whey powder. Results are reported as a mass fraction (percent).
