La présente Norme internationale spécifie une méthode de détermination du taux d'affleurement des semoules de blé dur, lequel constitue une caractéristique importante. Elle s'applique à la semoule de blé dur, obtenue uniquement par mouture, sans agglomération et ayant une teneur en eau supérieure à 10 %, et aux échantillons d'au moins 1 kg conditionnés en emballage étanches entièrement remplis. Elle ne s'applique pas aux déterminations réalisées à l'aide de tamis ayant une ouverture de maille inférieure à 160 µm. NOTE: En anglais, le taux d'affleurement des semoules est désigné par le terme «undersize fraction» et quelquefois par le terme «granulation».

Overview
ISO 15793:2000 specifies a standardized laboratory method for determining the undersize fraction (sometimes called granulation) of durum wheat semolinas. The method defines sample preparation, sieving equipment and settings, test portions, timing, calculation and result reporting to ensure comparable, reproducible measurements of the proportion of semolina that passes a chosen sieve aperture.

- Scope and applicability: Applies to semolina samples (minimum 1 kg packages) obtained only by comminution, with moisture between 10 % and 15.50 %. Not applicable for sieves with aperture sizes below 160 µm.
- Apparatus: Laboratory sieving machine (capable of ~200 r/min and amplitudes of 30 mm and 60 mm), circular sieves (200 mm frame, useful diameter ~185 mm), rubber balls (8 × 18 mm for primary procedure), spatula, soft brush, non‑electrostatic containers and an analytical balance (0.001 g).

- Primary test: take 50 g ± 0.5 g test portion, place in sieve with eight rubber balls, set amplitude 60 mm, sieve for 5 min ± 5 s. Discard oversized fraction, weigh undersize (m), calculate T = (m / m0) × 100.
