ISO 17412 specifies certain characteristics of the oil of bitter fennel (Foeniculum vulgare Mill. ssp. vulgare var. vulgare), in order to facilitate assessment of its quality.
Abstract
Overview
ISO 17412:2007 specifies quality characteristics for oil of bitter fennel (Foeniculum vulgare Mill. ssp. vulgare var. vulgare) to facilitate consistent assessment of essential-oil quality. The standard defines sensory and physicochemical properties, prescribes chromatographic profiling by gas chromatography, and references established ISO test methods for sampling, density, refractive index, optical rotation, miscibility, freezing point and other determinations. Two chemotypes are recognized: the trans‑anethole type and the phellandrene type.
Key topics and technical requirements
- Chemotype classification: two types - trans‑anethole and phellandrene - with distinct chromatographic profiles and properties.
- Sensory characteristics:
- Appearance: clear or crystalline vs mobile liquid depending on type.
- Colour: colourless to pale yellow (trans‑anethole) or pale to intense yellow (phellandrene).
- Odour and taste: characteristic anethole-like odour; sweet with a bitter aftertaste.
- Physicochemical limits (examples taken from the standard):
- Relative density at 20 °C, refractive index and optical rotation ranges specified for each type.
- Freezing point for trans‑anethole type: +3 °C to +10 °C (values higher than +10 °C may indicate adulteration).
- Miscibility in ethanol: test volumes and concentrations specified for each type.
- Chromatographic profile (normative):
- Gas chromatography is mandatory. The standard lists representative components (α‑pinene, β‑pinene, myrcene, α‑phellandrene, limonene, fenchone, methyl chavicol, trans‑anethole, etc.) and gives percentage ranges for each chemotype.
- Typical GC operating conditions and example chromatograms are provided in Annex A.
- Sampling and sample size: minimum test sample 50 ml (see ISO 212).
- Safety information: informative flashpoint values given in Annex B (approx. +63 °C for trans‑anethole type, +48 °C for phellandrene type, method-dependent).
Applications
ISO 17412 is used to:
- Support quality control and specification of bitter fennel essential oil in fragrance, flavor, cosmetic, food, pharmaceutical and aromatherapy supply chains.
- Provide acceptance criteria for suppliers, buyers and trading partners to verify authenticity and detect adulteration (e.g., aniseed oil or pure anethole).
- Standardize laboratory testing and reporting by analytical and contract labs using gas chromatography.
- Inform safety, transport and storage decisions by providing flashpoint guidance.
Who should use this standard
- Essential oil producers and distillers
- QC/analytical laboratories and GC specialists
- Ingredient buyers and procurement teams in food, cosmetics and perfumery
- Regulatory bodies, certification schemes and import/export inspectors
