ISO 5492:2008 defines terms relating to sensory analysis. ISO 5492:2008 applies to all industries concerned with the evaluation of products by the sense organs. The terms are given under the following headings: 1) general terminology; 2) terminology relating to the senses; 3) terminology relating to organoleptic attributes; and 4) terminology relating to methods. In addition to terms used in the three official ISO languages (English, French and Russian), this document gives the equivalent terms in German and Spanish; these are published under the responsibilities of the member bodies for Germany (DIN) and for Argentina (IRAM), respectively, and are given for information only. Only the terms and definitions given in the official languages can be considered as ISO terms and definitions.
Abstract
Overview
ISO 5492:2008 - Sensory analysis - Vocabulary is an international standard that defines the terminology used in sensory analysis and sensory evaluation. It provides standardized terms and definitions for use across industries that evaluate products by the human senses (sight, smell, taste, touch, hearing). The standard ensures consistent language for describing sensory attributes, sensory physiology and evaluation methods, improving clarity in research, quality control and product development.
Key topics
ISO 5492:2008 organizes terminology under four main headings:
- General terminology - foundational terms used in sensory evaluation (sample, panel, replication, etc.).
- Terminology relating to the senses - terms describing sensory physiology and perception (vision, olfaction, gustation, tactile, auditory aspects).
- Terminology relating to organoleptic attributes - vocabulary for sensory characteristics of products (aroma, flavor, texture, mouthfeel, appearance).
- Terminology relating to methods - terms for sensory test designs, protocols and analysis approaches (descriptive analysis, discrimination tests, hedonic testing, training).
Additional content includes a bibliography and alphabetical indices in multiple languages. The official ISO terms are given in English, French and Russian; German and Spanish equivalents are provided for information only.
Practical applications
ISO 5492:2008 is used to:
- Standardize reporting and documentation in sensory studies, ensuring reproducible and comparable results.
- Support Quality Assurance (QA) and Quality Control (QC) by providing clear descriptors for sensory specifications.
- Aid product development and reformulation by giving consistent attribute names for briefs, sensory maps and consumer insights.
- Facilitate communication between sensory scientists, regulatory bodies, suppliers and marketing teams.
Typical application areas include food and beverage, cosmetics, fragrances, household products, packaging, pharmaceuticals and any industry relying on human sensory evaluation.
Who uses this standard
- Sensory scientists and panel leaders
- Quality assurance and product development teams
- Food technologists and R&D laboratories
- Regulatory and standards professionals
- Academic researchers and educators in sensory science
Languages & reproduction
ISO 5492:2008 is published in three official languages (English, French, Russian) with German and Spanish equivalents for information. Reproduction of the defined terms for teaching or implementation is permitted under ISO conditions (non‑commercial, unmodified, source cited).
Related standards
Use ISO 5492:2008 alongside other sensory and food product standards (e.g., standards on sensory methods, sample preparation and statistical analysis) to build a complete sensory evaluation program.
