Overview - ISO 6886:2016 (oxidative stability of fats and oils)
ISO 6886:2016 specifies an accelerated oxidation test to determine the oxidative stability of animal and vegetable fats and oils. The method measures the induction period (in hours) under extreme conditions of elevated temperature and controlled air flow to provoke rapid oxidation. It is intended for both virgin and refined fats and oils, and can be used to compare the efficacy of antioxidants added to oils. Milk and milk-derived fats are excluded, and the presence of volatile fatty acids or acidic oxidation products prevents accurate measurement.
