This document specifies a method for the determination of the fat acidity of milled cereal products. It is applicable to flours and semolinas obtained from wheat and durum wheat, and to pasta. NOTE This document appears to be applicable also to grains, flours and semolinas obtained from maize, and rye flour and oat flakes, but a further interlaboratory test is necessary before confirming this extension of the field of application.

Overview

ISO 7305:2019 specifies a laboratory method for the determination of fat acidity in milled cereal products. Applicable to flours and semolinas from wheat and durum wheat and to pasta, the standard defines a reproducible procedure to quantify non‑esterified (free) fatty acids liberated during storage. Results are reported as milligrams of NaOH per 100 g of dry matter (mg NaOH/100 g dm). The document replaces the 1998 edition and updates the indicator and result expression for improved precision.

Sample preparation: Particle size requirements defined (passes 500 µm and ≥80% through 160 µm) - grind if needed. Store samples sealed at ~4 °C; equilibrate to lab temperature before analysis.

Moisture correction: Fat acidity is expressed on a dry‑matter basis; moisture shall be determined per ISO 712 or by validated NIR methods per ISO 12099.

Procedure & reporting: Two determinations are made; repeat until repeatability limits are met. Mean result expressed to the nearest milligram; conversion to grams of sulphuric acid is possible (divide by 816).

Precision: Repeatability and reproducibility characteristics are provided (interlaboratory results summarized in Annex A).
