This document establishes minimum specifications for wheat (Triticum aestivum L.) grains intended for human consumption and which are the subject of international trade. It is also applicable to local wheat trade. NOTE Wheat (Triticum aestivum L.) is also called "common wheat" in some regions.

ISO 7970:2021 - Wheat (Triticum aestivum L.) - Specification defines minimum quality and safety specifications for common wheat intended for human consumption and international (and local) trade. The fourth edition (2021) sets requirements for sensory, health, physical and chemical characteristics of wheat grain and defines sampling and test methods used to verify compliance. This standard is an essential reference for wheat quality control, trade contracts and food-safety compliance.
