ISO 8589:2007 provides general guidance for the design of test rooms intended for the sensory analysis of products. It describes the requirements to set up a test room comprising a testing area, a preparation area, and an office, specifying those that are essential or those that are merely desirable. ISO 8589:2007 is not specific for any product or test type. Although many of the general principles are similar, ISO 8589:2007 does not address test facilities for the specialized examination of products in inspection or in-plant quality-control applications.
Abstract
Overview
ISO 8589:2007 - Sensory analysis: General guidance for the design of test rooms - provides practical, product‑neutral guidance for designing sensory testing facilities. It defines the essential and desirable requirements for a sensory test room complex, including the testing area, preparation area, and office, to enable controlled sensory evaluations with minimum distraction and bias. ISO 8589:2007 applies to food and non‑food sensory testing but does not cover specialized inspection or in‑plant quality‑control facilities.
Key topics and technical requirements
- Test room layout: recommends separate but proximate testing and preparation areas to facilitate sample presentation while preventing cross‑contamination (odour, noise) and assessor bias. Annex A provides example layouts.
- Testing area and booths:
- Individual booths or group areas for different test types; booths reduce distractions and communication.
- Minimum booth working surface recommendations (for example, about 0.9 m wide × 0.6 m deep) and ergonomic clearances (e.g., ~0.35 m between seat and working surface).
- Booth dividers should extend beyond the counter (≈ 0.3 m) and may be full height for privacy; at least one booth should accommodate wheelchair access.
- Interior booth colour guidance (matt grey luminance ~15% - Munsell N4–N5; higher luminance for light/near‑white comparisons).
- Environmental control:
- Temperature shall be controlled; relative humidity controllable when it affects products.
- Noise minimization and sound‑resistant construction recommended.
- Odour control: use easy‑to‑clean, low‑odour materials; air systems with activated carbon filters and slight positive pressure can help.
- Lighting:
- Uniform, controllable lighting free of strong shadows. Examples: correlated colour temperatures around 6500 K (northern daylight) or 5000–5500 K for noon daylight; special lighting or filters may be used for colour masking or simulation.
- Preparation area & office: separate space for sample preparation, storage and administration; fittings and sanitation measures appropriate to the testing type (sinks, ventilation, safety).
- Safety and accessibility: signage, ventilation hoods, and provisions for assessors with disabilities.
Applications
- Designing or refurbishing sensory testing laboratories, panel rooms, or consumer test facilities.
- Establishing standardized conditions for product development, sensory research, and trained panel assessments.
- Guiding architects, lab managers, QA teams, and sensory scientists on test room design, booth configuration, and environmental controls.
Who should use this standard
- Sensory scientists and panel managers
- Food and non‑food product developers
- Laboratory designers and architects
- Quality and R&D teams planning sensory facilities
