Abstract
Overview
ISO 959-2:1998 is the International Organization for Standardization specification for white pepper (Piper nigrum L.), whole or ground. This second edition defines product types, quality limits, sampling and test methods, packaging and marking requirements, plus a normative method for determining apparent bulk density. It applies to semi-processed (SP) and processed (P) commercial stages and is intended for use in trade, quality control and regulatory contexts for spices.
Key topics and technical requirements
- Definitions & product types: distinguishes whole white pepper, ground white pepper, semi‑processed (SP) and processed (P) products.
- Physical quality limits (selected values from Table 1):
- Extraneous matter: max 1.0% (SP), 0.8% (P) by mass (ISO 927).
- Broken berries: max 4.0% (SP), 3.0% (P).
- Black berries: max 15% (SP), 10% (P) (Samarinda exception: 20%).
- Apparent bulk density: min 600 g/l (Annex A method).
- Chemical requirements (Table 2):
- Moisture: max 14.0% (ISO 939).
- Total ash: max 3.5% on dry basis (ISO 928).
- Volatile oils: min 1.0 ml/100 g (whole), 0.7 ml/100 g (ground) (ISO 6571) - note recommendation to measure immediately after grinding.
- Non‑volatile ether extract: min 6.5% on dry basis (ISO 1108).
- Piperine content: min 4.0% on dry basis (ISO 5564).
- Ground product: acid‑insoluble ash max 0.3%, crude fibre max 6.5%.
- Sampling and test methods: sampling per ISO 948; specific analyses use referenced ISO methods listed in the standard.
- Packing & marking: packages must protect against moisture and loss of volatiles and be labeled with product name, manufacturer, batch, net mass, commercial stage (SP/P), producing country, destination and reference to ISO 959.
- Storage & transport guidance (Annex B): keep dry, ventilated, odor‑free, and protected from sun, rain, pests and contamination.
Applications and who uses it
ISO 959-2:1998 is used by:
- Spice growers and processors for defining white pepper quality grades.
- Exporters/importers and commodity traders for contract specifications and acceptance criteria.
- Food testing and quality control laboratories for standardized analytical methods (moisture, piperine, volatile oil, ash).
- Packaging and logistics teams to ensure proper packing, labeling and transport.
- Regulators and certification bodies for compliance with international spices standards.
