EN ISO 12872:2022 (ISO 12872:2022) specifies a laboratory method for determining the content, expressed as a percentage mass fraction, of 2‑glyceryl monopalmitate (2‑GMP) in olive oils and olive‑pomace oils that are liquid at ambient temperature (20 °C). The method is based on enzymatic partial hydrolysis with pancreatic lipase, followed by silylation and analysis by capillary gas chromatography (GC). This European adoption supersedes the 2014 edition and aligns with IOC procedures (COI/T.20/Doc. No 23/Rev.1:2017).
