ISO 4121:2003 provides guidelines describing quantitative response scales (where the response obtained indicates the intensity of perception) and their use when assessing samples. It is applicable to all quantitative assessment, whether global or specific and whether objective or hedonic. It is intentionally limited to the most commonly used measurement scales for sensory assessment.
Abstract
Overview
ISO 4121:2003 - "Sensory analysis - Guidelines for the use of quantitative response scales" provides practical guidance on designing and using quantitative response scales in sensory evaluation. The standard explains how to record perceived intensity (global or specific; objective or hedonic) using commonly used response formats and clarifies the relationship between response scales and underlying measurement scales (ordinal, interval, ratio). Annex A gives application examples (e.g., sweetness comparisons).
Keywords: ISO 4121:2003, sensory analysis, quantitative response scales, measurement scale.
Key topics and technical requirements
- Types of response scales: numerical and verbal scales, continuous (e.g., 15 cm line scales) and discrete/category scales, dynamic scales (time-varying intensity recorded via cursor/potentiometer), and pictorial scales (e.g., faces for children).
- Scale polarity: guidance on choosing unipolar (neutral at one end) vs bipolar (neutral in center) anchors and avoiding anchors that do not form a logical continuum.
- Equality of intervals: cautions that perceived intensity may not guarantee equal numerical intervals; interpreting responses as interval or ratio measurements should be treated as a working hypothesis.
- Quality of measurement: emphasizes assessor training (ISO 8586), consistent sample presentation (ISO 6658), and minimization of end effects (tendency to avoid extreme scale ends).
- Choice criteria: scales must be easily understood, easy to use, discriminating, and unbiased.
- Practical notes: smaller category counts increase end effects; 9‑point hedonic scales often more discriminating than 7‑ or 5‑point; transcription and data acquisition considerations for continuous vs discrete formats.
- Statistical analysis: refers to ISO 8587 for the Friedman test and recommends standard ANOVA methods for interval-scale assumptions.
Applications and users
ISO 4121:2003 is used by:
- Sensory scientists and panel leaders designing sensory tests
- Food and beverage R&D teams comparing product attributes (e.g., sweetness, texture)
- Quality assurance and product development professionals standardizing sensory measurement
- Researchers and labs requiring defensible scale selection and documentation
Typical uses:
- Selecting response formats for hedonic or descriptive studies
- Training assessors to use scales consistently and avoid bias
- Choosing between continuous, discrete, dynamic, or pictorial approaches
- Preparing data for appropriate statistical treatment (rank tests, ANOVA)
