Abstract
Overview
ISO 8442-1:1997 specifies material, construction and performance requirements for metal cutlery and related implements intended for the preparation of food. Part of the broader ISO 8442 series on “Materials and articles in contact with foodstuffs - Cutlery and table holloware,” this first part defines two grades of cutlery (normal and special), required materials (notably stainless steels), and laboratory test methods to demonstrate safety, durability and suitability for food-contact use.
Key topics and technical requirements
- Scope and grades: Defines a normal grade (dishwasher-resistant) and a special grade (dishwasher-resistant and capable of sterilization).
- Materials: Specifies acceptable metal blade compositions (martensitic and austenitic stainless steels and ferritic grades) and permitted materials for rivets and fittings; non-metal handles limited to plastics, impregnated wood, laminates or other synthetics that meet performance tests.
- Construction & workmanship:
- Visible surfaces free from scale, cracks, laps and other defects.
- No gaps > 0.3 mm between components.
- Edges free from flash and burrs; symmetry and straightness required unless intentional.
- Knife edge types:
- Type A: Resharpenable edges (tooth pitch > 1 mm); hardness ≥ 52 HRC.
- Type B: Non-resharpenable edges; hardness ≥ 48 HRC.
- Typical edge geometry limits (included angle ≤ 40°, thickness limits measured 1 mm from edge) and special allowances for chopping blades.
- Performance tests:
- Corrosion resistance - accelerated corrosion tests on blades, tangs and bolsters (including immersion in saline solution and visual/pitting criteria).
- Strength/bend test - bend forces related to blade length to check cracking, breakage or permanent set.
- Handle attachment - immersion (75 °C normal / boiling special) then pull and torque tests to verify firm attachment.
- Plastic handle tests - softening (penetration ≤ 0.10 mm under load at elevated temperature) and environmental stress cracking (chemical immersion and thermal cycling).
- Normative references: ISO 306 (Vicat softening) and ISO 6508 (Rockwell hardness) are referenced for specific tests.
Applications and users
ISO 8442-1 is used by:
- Cutlery and kitchenware manufacturers to design and validate food-preparation utensils.
- Quality control and test laboratories to perform conformity testing.
- Regulatory bodies and procurement teams assessing food contact safety, dishwasher safety and sterilization suitability.
- Designers and product engineers specifying material selection, blade geometry and handle attachment methods to meet market and legal requirements.
Keywords: ISO 8442-1, cutlery for the preparation of food, food contact materials, stainless steel cutlery, corrosion resistance, dishwasher safe, knife hardness, cutlery performance tests.
Related standards
- Other parts of ISO 8442 (Parts 2–8) cover stainless-steel and silver-plated cutlery, gold-plated and precious-metal specifications, specific cutting tests and lacquered finishes.
- The standard references European Directives on food contact materials (e.g., EC 77/99, EC 89/109) and aligns with CEN/TC 194 work.
