La présente norme prescrit les exigences afférentes aux matériaux constitutifs et aux performances des couverts de table (couteaux, fourchettes, cuillers, ustensiles à découper, louches, couverts pour enfants et autres articles utilisés pour le service), ainsi que des méthodes d'essai. La présente norme s'applique aux couverts en acier inoxydable, et aux couverts en maillechort ou en acier inoxydable revêtus d'argent. Elle ne concerne ni les couverts entièrement fabriqués en métaux précieux, aluminium, acier ordinaire, ni ceux entièrement fabriqués en maillechort. Elle ne traite pas non plus des couverts dorés ou chromés. Pour les couverts en métal argenté, trois épaisseurs minimales d'argent sont spécifiées.

ISO 8442-2:1997 specifies material, construction, performance and test requirements for stainless steel and silver‑plated cutlery intended to come into contact with food. It is Part 2 of the ISO 8442 series covering cutlery and table hollowware and complements other parts that address silver‑ or gold‑plated and precious‑metal items. The standard focuses on safety, durability and hygiene - not on aesthetic design or size.

Performance tests
- Corrosion resistance (Annex C): limits on crack lengths and number/size of pits/intergranular corrosion (e.g., no transverse/longitudinal cracks >15 mm; pit area limits specified).
- Strength: martensitic knife blades and carving forks must resist cracking and excessive permanent deformation (Annex D). Spoons, forks and unsharpened knives limited to ≤1 mm permanent deflection under a specified load (0.7 N/mm or 100 N).
- Handle fastening: must resist pulling force (~180 N) and specified torques after immersion.
- Blade hardness: martensitic blades ≥48 HRC (carving knives ≥52 HRC).
