ISO 8534:2017 specifies a method for the determination of the water content of animal and vegetable fats and oils (hereinafter referred to as fats) using Karl Fischer apparatus and a reagent which is free of pyridine. Milk and milk products (or fat coming from milk and milk products) are excluded from the scope of this document.

EN ISO 8534:2017 - Animal and vegetable fats and oils - Determination of water content - Karl Fischer method (pyridine free) is a CEN-endorsed international standard that specifies Karl Fischer titration procedures for measuring water content in fats and oils. The standard covers a pyridine‑free reagents approach (volumetric method in the main text) and includes a coulometric titration option in Annex B. Solvent recommendations: Absolute methanol is preferred; for fats and oils use a methanol–chloroform mixture with methanol ≥ 25% by volume (optimally 50%).

Apparatus & sampling:

Karl Fischer apparatus configured per manufacturer guidance; use an airtight vessel and avoid high-humidity locations.
Analytical balance readable to 0.1 mg; gas-tight syringes for standard injections.
Sampling/preparation references: ISO 661 (sample preparation) and recommended sampling method ISO 5555.

Quality & precision: Method includes precision and interlaboratory data (repeatability and reproducibility) and requires calibration with certified water standards.
