ISO 1003:2008

Overview

ISO 1003:2008 - "Spices - Ginger (Zingiber officinale Roscoe) - Specification" defines quality, chemical, physical and hygienic requirements for commercial dried ginger. The standard covers whole, sliced, cut and ground ginger, sampling and test methods, a normative method for calcium determination (Annex A) and storage/transport recommendations (Annex B). It is intended to support consistent product specification, testing and trade.

  • Moisture: whole/pieces ≤ 12.0%; ground ≤ 11.0% (ISO 939).
  • Total ash ≤ 8.0% (ISO 928). Note: incineration at 600 °C ± 25 °C.
  • Acid‑insoluble ash ≤ 1.5% (ISO 930).
  • Volatile oil: whole/pieces ≥ 1.5%; ground ≥ 1.0% (ISO 6571).
  • Calcium (as CaO): unbleached ≤ 1.1%; if bleached (optional) ≤ 2.5% - Annex A provides the titrimetric method (incineration → calcium oxalate precipitation → KMnO4 titration).
• Hygienic and regulatory: Must comply with applicable international, regional and national regulations on contaminants, pesticides, mycotoxins, heavy metals and hygienic handling. Treatments (fumigation, irradiation, chemical bleaching) only by buyer‑seller agreement.
• Sampling & testing: Sampling per ISO 948; ground test samples passed through 1 mm sieve (ISO 565). Test methods referenced in the standard should be used for conformity assessment.
• Packing & labelling: New, food‑grade packaging that protects from moisture, loss of volatile matter and odours; labelling data agreed between buyer and seller.
