ISO 8442-9:2018 specifies material and performance requirements and test method of ceramic blades of knives intended for use in the preparation of food.
Abstract
ISO 8442-9:2018 - Overview
ISO 8442-9:2018 specifies material, construction and performance requirements and test methods for ceramic blades of knives intended for food preparation. Part of the ISO 8442 series on materials and articles in contact with foodstuffs (cutlery and table holloware), this standard focuses on ensuring ceramic knives are safe, durable and suitable for use with food.
Key topics and technical requirements
The standard sets measurable criteria and test procedures for ceramic knife blades, including:
-
Materials & construction
- Ceramic blades must meet general cutlery strength and handle attachment requirements (ISO 8442-1).
- Surface defects such as cracks, pores or chipping are not permitted after penetrant testing (ISO 3452-1).
-
Porosity and defects
- Porosity ≤ 1.5%; maximum pore diameter ≤ 25 µm.
- Microstructure and inclusions examined by metallography (Annex A).
-
Geometry
- Cutting edge included angle ≤ 40°.
- Edge thickness ≤ 0.46 mm at 1 mm from the extremity (measured 25 mm from handle).
-
Hardness
- Vickers hardness ≥ 1 100 HV3, measured across trisection points (ISO 14705).
-
Sharpness & edge retention
- Sharpness z ≥ 60 mm and edge retention z ≥ 300 mm (test method in ISO 8442-5).
-
Impact resistance
- Inclined-plane impact test using a Leeb hardness tester (type D); no chips or cracks allowed after specified impact points and procedure (Annex B).
-
Coating/print bonding strength
- Abrasion test with P180 abrasive pad under 0.007 MPa pressure, 250 cycles with pad renewal every 50 cycles; coating/print must not expose substrate or delaminate (Annex C).
-
Dishwasher safety
- Items labeled “Dishwasher safe” must withstand 125 cycles per EN 12875-1 without visible damage (inspection every 25 cycles).
-
Thermal shock
- Test B of EN 1183 with ΔT = 280 °C (e.g., 300 °C → 20 °C); blades must show no cracks or deformation.
-
Safety instructions
- Packaging/brochure must include use and safety guidance (avoid dropping, not for hard/frozen foods or bones, keep away from children).
Applications - who uses this standard
ISO 8442-9:2018 is essential for:
- Ceramic knife manufacturers and designers to set product specifications and QA criteria
- Testing laboratories performing hardness, sharpness, impact, abrasion, dishwasher and thermal shock tests
- Procurement and compliance teams evaluating suppliers and labeling claims (e.g., “dishwasher safe”)
- Retailers, regulators and consumer-safety organizations assessing product safety for market access
