Abstract
Overview
ISO 959-1:1998 specifies quality and testing requirements for black pepper (Piper nigrum L.), whole or ground. It covers commercial stages - non-processed (NP), semi-processed (SP) and processed (P) pepper - and sets requirements for organoleptic qualities, freedom from contaminants, physical and chemical characteristics, sampling, testing, packaging and marking. Annexes A and B are normative (test methods for light berries and bulk density); Annexes C and D give guidance on storage/transport and microscopic structure.

- Non‑volatile ether extract (on dry basis): min 6.0% (ISO 1108)
- Volatile oil (on dry basis): min 2.0 ml/100g (whole), 1.0 ml/100g (ground; determine immediately after grinding) (ISO 6571)
- Piperine (on dry basis): min 4.0% (ISO 5564)
- Acid‑insoluble ash and crude fibre limits apply for specific commercial stages
- Sampling & test methods: sampling per ISO 948; tests reference ISO methods for ash, moisture, piperine, volatile oil, extraneous matter, etc.
- Packaging & marking: protective, dry packaging; labels must include product name, manufacturer, batch, net mass, commercial stage (NP/SP/P), producing country, destination and reference to ISO 959.
